I really appreciate your approach to learning left hand. I think the way you're doing it is exactly right. Don't feel like you're breaking your rule by changing up the left hand here or there, it'll be important later on to hear when it makes musical sense to do so.
Also I'm finding it pretty interesting to hear your versions of these pop songs, songs that I don't already know myself, because by stripping them bare of everything but the melody and chords like that, it lays bare the fact that there's really almost nothing there. These songs aren't written to be performed the way you are doing them, of course. Feels a little bit like you're touting the side salad at a steak house. In a way though, this is probably good, because the repetitious chord progression almost functions like finger exercises for your left hand.
